in the United States as designated by the
Maitre Cuisinier de France. He brings more than three
decades of culinary and management experience
to Brasserie Pavil, accruing top chef honors and accolades
for his classic culinary approach. Bajeux was named
«Chef of the Year» from the American Tasting
Institute and has also been designated
«Outstanding Member, 1997-2000» by the James Beard Foundation.
